Raw Chocolate

Here’s a super easy and quick recipe on how you can make your own. You will need:

  • 250gr. raw cacao butter
  • 12 tbsp raw cacao powder
  • 3 tbsp raw coconut palm sugar
  • 1/2 tbsp himalayan sea salt
  • Add ins of your choice

Please keep in mind that this is a DARK chocolate. So if you would like it less bitter add more coconut palm sugar and less cacao powder. 🙂

Homemade Vegan Coconutmilk Yogurt

So on my trip to Amsterdam last week I got to stop at (more like I forced my family to go there with me haha) at this health food store called unlimited health. I bought multiple items and one of my favourite purchases would have had to be a tub of CoYo (Coconutmilk yogurt).

I liked it so much I finished it all in the same day and had to go back for more the next day. I wish I could have bought an unlimited supply to take back home with me but sadly due to it being a refrigerated item that obviously wasn’t an option. (Also not sure the airplane crew would have like me bringing back home a massive amount of CoYo haha). So I decided I would just have to make my own. The first time round making this I was very skeptical and was expecting the outcome to be a massive failure. But to my surprise it actually turned out really great and I was left with a delicious creamy and thick greek yogurt type consistency. Due to this being a fermented products it is amazing for your health and can help replenish that important gut bacteria of yours. You will need:

  • 1.5 Litres of full fat Coconut Milk
  • 4 Probiotic Capsulses or yogurt starter of your choice (they should state on the directions the amount you need to use)
  • 2 tbsp xanathan gum; this will work as a thickening agent
  • 4 tbsp coconut flour
  • An oven or any other device that can produce a heat of 40 degrees celsius for a long period of time

Step 1: Heat up the coconut milk

Heat up the coconut milk in a pan until it’s hot but not boiling yet. This will kill any of the leftover bad bacteria that you don’t want in your yogurt.

Step 2: Let the Coconut Milk cool down and then add the probiotics

Let the coconut milk cool back down to room temperature. Mix in the probiotics, coconut flour and xanathan gum.

Step 3: Let the fermentation process begin

Place your coconut milk in an oven that heated up to 40 degrees celsius and leave it there for 20-24 hours. This will give the bacteria time to grow and ferment the milk. During this process your coconut milk should start to thicken up and turn into yogurt.

Step 5: The final step

Remove the coconut milk yogurt from the oven and place in the fridge for at least 6 hours before consuming. This will stop the growing process of the bacteria and further thicken the yogurt

And that’s it. Feel free to mix berries, raw cacao or anything your heart desires into your yogurt to turn it into flavoured yogurt.

Single Serving, Vegan and Gluten-free Strawberry Crumble

IMG_5532I still remember when I used to be a little girl and would go up to england to visit my grandparents. One of the highlights would always be this delicious crumble my grandma and I would make. First my grandpa and I would go and pick the fruit for the crumble from his garden, and then I got to help my grandma create the crumble. I still remember sneaking dough into my mouth every time she turned around and then patiently sitting in front of the oven waiting for it to be done. By the time it was done the whole house was always filled with the delicious smell of crumble and I have so many wonderful memories of sitting down with my grandparents and enjoying a bowl of hot crumble and custard.

So, when waking up on this rainy, sunday morning I suddently felt the urge to just sit down and enjoy a bowl of hot crumble and that’s when I came up with this: A delicious strawberry crumble that’s not only vegan but free of dairy, gluten, refined flour and sugar and defiantly a healthier version of the traditional english crumble. It was still just as comforting and delicious thought!

You will need:

  • 1/2 cup flour of your choice (I used a mix between oat flour, protein powder and coconut flour)
  • Vanilla to taste (about 1/2 a tbsp)
  • 1/16 tsp of salt
  • Desired amount of Stevia or Sweetener of choice (when using liquid sweetener, cut back on the applesauce a little bit)
  • 3 tbsp unsweetened applesauce
  • 2 tbsp coconut butter (you can make your own by blending unsweetened coconut flakes in a food processor until they reach a buttery consistency)
  • 1/3 cup chopped up strawberries or any other fruit of your choice

IMG_5531Preheat the oven to 170 degrees celsius. Combine the dry ingredients together. Then melt the coconut butter, and add to the dry ingredients. Add the unsweetened apple sauce and rub it all together using your hands until it resembles the texture of bread crumbs. If needed add more unsweetened apple sauce or coconut butter. Fill your baking dish with half the mixture. Then add your fruit and cover with the other half of the crumble mixture. Bake in the oven for about 20-30min or until gold brown and enjoy.

Vanilla-Coconut Pancakes

IMG_5043I have been loving these vanilla-coconut pancakes lately. They are pretty low in carbs, high in fiber and free of gluten, dairy and refined sugars. Oh and they’re super yummy 😉 ! These do contain Coconutflour and Vanilla Protein Powder, and because I know people will ask I bought my coconut flour in my local healthy food store and I the protein powder I use is the raw, vegan protein blend by sunwarrior. they are pretty low in carbs, high in fiber and free of gluten, dairy and refined sugars.

You will need:

  • 3 free range, organic egg whites
  • 3/4 scoop protein powder
  • 14gr. coconut flour
  • up to 10 tbsp of water or milk of choice

Mix the egg whites, the protein powder and the coconut flour. Then slowly add the water until you get a good consistency and cook in a non stick pan with a little coconut oil. Add toppings of choice and enjoy!

Low Carb, High Protein, Bounty Bites

Sorry for the lack of posts lately guys, school year’s coming to an end wich means studying, studying and more studying to do! Thank god things should calm down in a few weeks, can’t wait for my summer holidays! IMG_4995

Any who, on the topic of school I took these protein bounty bites and some berries to school with me today and absolutely loved them! They are raw, vegan, high in protein, low in carbs, super filling and absolutely delicious. Perfect study fuel! Just went ahead and made some more to take with me tomorrow I loved them so much 🙂 haha. So I just had to share this recipe with you guys :). Oh and yes, the main ingredient in these is protein powder. I know a lot of my readers don’t have protein powder, so I apologize for that. But for everyone that does here’s the recipe 🙂

  • 1 scoop vanilla protein powder (I used sun warrior’s raw, vegan protein blend. Any protein powder should work but please keep in mind that depending on what protein powder you use these won’t be raw/vegan).
  • 1 tbsp coconut butter
  • 2 tbsp unsweetened apple sauce
  • Optional: Add Maca powder, baobab, brahami and guarana powder for that extra punch of nutrition. I did this but you could also easily skip this

Slowly add water until the dough reaches a nice and sticky consistency. Form little balls and then roll in unsweetened shredded coconut. Enjoy 🙂

Healthy Chocolate Bites; Vegan, Raw, Paleo

I don’t even know where to begin with these. All i can say is there damn good. Like you would never guess they’re healthy kinda good. I would go as far as saying my best recipe yet; if I may say so myself. And they survived the ultimate test, both my brothers (extremely picky eaters) not only approve but love them. My brother actually wouldn’t belive me when I told him they were healthy haha. Can you imagine his face when I told them these were raw, vegan. gluten, dairy and oil free!? Yup that’s right. Okay enough rambling, can you tell how extremely happy and hyper I am about finding these? 😛 Defiantly will be making them again soon as I just made ours this morning and we might have already eaten all of them, ups haha.

This is what I used (Makes about twice the amount shown):
  • 19 pitted dates
  • 100 gr. almond meal
  • 3 tbsp natural walnut butter or 3 large handfuls of walnuts
  • 40 gr. raw cacao powder
  • 2 tbsp of water
  • Shredded coconut (for rolling the bites in)

Optional:

  • 2 tbsp maca powder
  • 4 tbsp mesquite powder
  • 45 gr. vanilla protein powder (I used sunwarrior)
  • If you add the maca, mesquite and vanilla protein powder you wil also have need to add an additional 8 tbsp of water

Directions:

Combine all the ingredients except for the coconut in a food processor and blend until you have a smooth consistency. Roll into little balls. Keep in the fridge for at least 2 hours and enjoy. Optional: Roll balls in shredded coconut for a coconut-chocolate flavour.
