Vanilla-Coconut Pancakes

IMG_5043I have been loving these vanilla-coconut pancakes lately. They are pretty low in carbs, high in fiber and free of gluten, dairy and refined sugars. Oh and they’re super yummy 😉 ! These do contain Coconutflour and Vanilla Protein Powder, and because I know people will ask I bought my coconut flour in my local healthy food store and I the protein powder I use is the raw, vegan protein blend by sunwarrior. they are pretty low in carbs, high in fiber and free of gluten, dairy and refined sugars.

You will need:

  • 3 free range, organic egg whites
  • 3/4 scoop protein powder
  • 14gr. coconut flour
  • up to 10 tbsp of water or milk of choice

Mix the egg whites, the protein powder and the coconut flour. Then slowly add the water until you get a good consistency and cook in a non stick pan with a little coconut oil. Add toppings of choice and enjoy!

Healthy Carrot Cake Waffles

Delicious and nutritious carrot cake waffles with a vegan “cream cheese” icing…yum! Depending on the flour you use these can be gluten free and when using protein powder they can even be made high protein and low carb.IMG_4769

You will need:

  • 1 medium grated carrot
  • 1 tbsp unsweetened apple sauce
  • 1 free range, organic egg
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp ground vanilla
  • 5 tbsp milk of choice, or water
  • 20 gr. flour of choice (I like using a mix between protein powder and quinoa flour)
  • stevia or sweetener of choice to taste (use less water if using a liquid sweetener)

Whisk the egg and add remaining ingridients. Pour the batter into a waffle maker and wait until done. Serve with toppings of your choice, I like to use this vegan “cream cheese” icing that I make by simply mixing one and a half tbsp all natural cashew butter and 1/2 tbsp water.

Scrambled eggs with Vegetables

IMG_4355 IMG_5029 I have been absolutely loving this meal lately. It’s super easy, simply to make, nutritious and delicious. I change it up every time but basically I just cut up vegetables like Broccoli, Asparagus, Mushrooms, Ginger, Garlic, Onion, Bell pepper, Sweet potatoes, Tomatoes, Zucchini.Throw it all in a pan starting with the vegetables that need the longest to cook. Towards the end I add 2 free range, organic eggs and spice it with pepper, ground chilli and nutritional yeast. And sometimes I also enjoy throwning some beans or chickpeas in there.IMG_5096

Yum! So simple, delicious and healthy.
