Banana and Nutbutter Chocolate Cups; Paleo, Raw, Vegan

Good afternoon everyone!

Hope you all are doing well! Today I want to share the recipe for these delicious banana & nutbutter chocolate cups with you!

All you need is:

  • Some of the basic, homemade raw chocolate. Click here for recipe.
  • Sliced bananas
  • Any nut- or seedbutter of your choice! (I like cashew and almondbutter)
  • And some silicon cupcake cups

Start by covering the base of the cups with some of the raw chocolate.

Set them in the freezer for 10-15min. Then add the banana slices and the nutbutter.

Pour the remaining raw chocolate on top and leave in the fridge for at least 1 hour.

Raw Chocolate

Here’s a super easy and quick recipe on how you can make your own. You will need:

  • 250gr. raw cacao butter
  • 12 tbsp raw cacao powder
  • 3 tbsp raw coconut palm sugar
  • 1/2 tbsp himalayan sea salt
  • Add ins of your choice

Please keep in mind that this is a DARK chocolate. So if you would like it less bitter add more coconut palm sugar and less cacao powder. 🙂

Banana, Walnut and Chocolate Chunk Cookies (Paleo, Vegan, GF, SF)

Let’s be honest: who doesn’t love good cookie every now and then? I sure do!  This might not be particularly modest to say, but these chocolate chip, walnut and banana chunk cookies are pretty darn amazing and super delicious!

You will need:

  • up to 2 cups of almond flour
  • 1/2 cup of all natural almond butter
  • 1/2 cup extra virgin coconut oil, melted
  • 1/2 cup crushed walnuts
  • 2 bananas
  • 1/2 cup (or more) of local honey (strict vegans can use maple syrup)
  • 1 chia seed egg (1 tbsp of chia seeds mixed with 3 tbsp of water and soaked for at least 15 min; this can be substituted for one free range organic egg if you don’t have chia seeds)
  • 1/4 cup (or more!) raw cacao nibs (you can also use dark chocolate chips)
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Preheat the oven to 180 degrees celsius. Melt the coconut oil and combine with the almond butter, almond flour, chia seed egg, baking soda and salt.Cut the banana into small chunks and stir in to the dough. Add the walnuts and cacao nibs and stir in. Form cookies and lay out on a baking sheet. Bake in the preheated oven for 10-15min.

Food diary August 25th

So I am always being asked to do a post showing what and how much I eat in a day. Until now I have always been very hesitant towards that request as what and the amount I eat changes every single day. Some days I eat more, some days I eat less. Some days I might have more carbs and then I’ll have a day where I’ll might have a little more heathy fats. I try to listen to my body and give it what it needs. I really encourage you to find what works for you and your body. No two people are the same and what works for me might not work for you and the other way around. Listen to your body and find what makes you feel satisfied, energized and happy 🙂 If you would like more of these, please let me know and I’ll be more than happy to do so.

7:30 Time for breakfast!

Today I had this delicious powerbowl for breakfast, it’s basically just a blend of strawberries, blueberries, a nectarine, oats, coconut flour, vanilla protein powder, spinach and then I went ahead and added superfoods like: wheatgrass, maca, lucuma, aloe vera, spirulina etc. Topped it with raw cacao nibs, buckwheat, nuts, inca berries and strawberries. 10:30 Pre workout snack:

Cucumber, Strawberries, Nuts and bell pepper. I also had one scoop of sunwarrior vanilla protein powder mixed with water after this 🙂

13:30 Post workout:

An omelette with sweet potato, cinammon, ground vanilla and all natural almond butter, cucumber and bell pepper.

16:00 Mid afternoon snack

Raw vegan chocolate Ice cream topped with chia seeds, buckwheat, nuts, hemp seeds, a fig and some dried inca berries. The original recipe can be found here: http://healthyyfood.com/2013/04/29/raw-vegan-chocolate-ice-cream/ I just added 1 scoop of protein powder.

19:30 Dinner

Quinoa, Cucumber, Bell Pepper, Cherry Tomatoes and mushrooms. All drizzled with a little extra virgin olive oil and lemon juice.

So this is what I ate today 🙂 I also had plenty of water to drink through out the entire day and took my daily supplements.

Raw, Vegan Brownies

Inspired by my raw, vegan chocolate bites

It’s my brother’s birthday today, usually I will go ahead and bake him his favourite cake. But today I decided to try and go ahead and make some healthy brownies! Having my relatives come over I knew these would have to survive the ultimate test. And I was really excited and happy to see that they all loved them.

Filled with the amazing benefits and antioxidants from the raw cacao (read more here) the heart healthy omega 3 fatty acids from the walnuts (read more on the benefits of healthy fats here) and the anti-inflammatory properties from the dates, these make some delicious brownies you can indulge in guilt-free.

You will need:

  • 3.5 cups of nuts (I recommend walnuts)
  • 3 cups dates
  • up to 1 cup raw cacao powder
  • 1 tbsp ground vanilla
  • Optional: shredded coconut

Blend 2 cups of nuts and the dates in a food processor until your left with a smooth consistany. Remove from the blender and mix with the raw cacao powder. Crush the remaining nuts and mix them in. Store in the freezer for atleast 3 hour, remove 10min prior to serving and enjoy ♥

Benefits of acai berries and homemade acai power bowl

The other day I was at my local health food store and saw acai powder for the first time. Having heard so much about it I just had to go ahead and try it. Today I wanted to share some of the amazing benefits of acai berries with you all and let you know how I made the acai bowls. There won’t be a specific recipe, because I honestly think it can be changed up so many ways and I really recommend just using what you have on hand and playing around with it :).

Acai berries are commonly found in the Amazon. They are purple in colour and an exotic relative of blueberries. They have been associated with many health benefits, some of wich I’d like to share with you today. Acai berries have been shown to lower our risk of various heart diseases, promote skin health and aid in weight loss/maintain a healthy weight. They are high in dietary fiber and great for detoxifying the body. Due to their high level of antioxidants they help prevent aging and can help lower your risk of cancer. Studies have shown an increase in energy and mental function linked to acai berries.

The morning after having purchased the acai berries I decided to try to go ahead and make myself an acai bowl for breakfast, a dish that seems to be pretty popular in Brasil. Basicly I just blended a banana, with 2 large handfuls of strawberries, fresh coconut water, some gluten-free oats and the acai berries. I also added some fresh aloe vera, wheatgrass, spirulina, maca, lucuma, brahmi, guarana, raw vegan protein powder and cinnamon for that extra nutritional punch but you could easily just skip that aswell. Then I topped it all of with crushed walnuts, raw cacao nibs, strawberries, blueberries, raspberries, banana and oats. It was so so delicious and full of flavour. The acai berries gave it such a unique, and incredible flavour. I loved and cherished ever single bite and felt so energized and amazing the whole day.

I kept on raving about my breakfast to my mum, so by the time the next day rolled around she really wanted to try one too. So I made one for each of us and again, it was just a blend of banana, strawberries, coconut water, oats and the acai berries but this time I also added some fresh raspberries and blueberries. For extra nutritional benefits I also added aloe vera, wheatgrass, spirulina, maca, lucuma, brahami, guarana, gluten-free oats, raw vegan protein powder and cinammon (all of this can easily be skipped, as it dosn’t change the taste). And topped the mixture with raw cacao nibs, blueberries, strawberries, oats and crushed walnuts. It turned out amazing and she absolutely loved it. So much that we just ordered a bunch online, because my health food store has been sold out these past couple of weeks and we don’t want to/can’t wait any longer. Hahaha 🙂IMG_5787

Vegan, Single Serving Chocolate Chip Cookie

Because who doesn’t love a crumbly, delicious chocolate chip cookie?

You will need (makes 1 large cookie)

  • 1 tablespoon coconut butter (you can make your own by blending unsweetened coconut flakes in a food processor until they reach a smooth, buttery consistency)
  • 3 tablespoons flour of your choice (I like using a mix between coconut flour, protein powder and gluten-free oat flour)
  • 1 tablespoon unsweetened apple sauce or mashed banana
  • 1/8th of  a tablespoon vanilla
  • Desired amount of stevia or sweetener of your choice
  • Cacao nibs (you can also use dark chocolate chips)

Melt the coconut butter and add the remaining ingredients. If necessary add a little water. Form a cookie and bake in the oven at 160 degrees celsius for 15-20min or until done. Enjoy 🙂

Healthy, Raw, Vegan Rasberry-Cacao Fudge Cake

Healthy, Raw, Vegan, Chocolatey, Fudgy and delicious…oh my! I made this as a dessert for my parents anniversary day. They loved it and lets just say we  finished the whole cake in one sitting. Nough said. This guilt free treat is filled with antioxidants, nutrients, vitamins and minerals. It contains all the amazing benefits from the raw cacao (read more here) and many more. It won’t only satisfy your taste buds but also contains amazing anti inflammatory properties, helps prevent cancer, slows down the aging process, will help maintain healthy blood pressure and so much more! Being free of sugar, oil, gluten, dairy, nuts or flour this Cake is a great and healthy way to indulge. I will go ahead and say that the combination of chocolate and raspberries is quite unique, and might not be every ones cup of tea,. But both my parents and I absolutely loved it.

For the Crust you will need:

  • 20 pitted organic dates
  • 60 gr. of  oats or oat flour (for gluten-free version use gluten-free oats)

Combine ingredients in a blender and blend. Form a crust by pressing the dough into a cakeform.

For the Filling you will need:

  • 15 tbsp (or more!)  unsweetened raw cacao powder
  • 5 tbsp of coconut butter (not the same as coconut oil)
  • 10 dates
  • 600 gr. organic, fresh, raspberries
  • 5 tbsp raw, vegan protein powder (you could probably skip this)
  • 1 tbsp ground vanilla
  • pinch of salt
  • Optional: Sweetener of choice

Healty, Fudgy Chocolate Brownies

These Brownies are delicious, completely free of gluten, dairy and refined sugar and contain a hidden little ingredient: Sweet potatoes!

Why Sweet potatoes?

  • Sweet potatoes are a good source of complex carbohydrates
  • Rich in magnesium

Magnesium is vital for healthy artery, blood, bone, heart, muscle, and nerve function. Magnesium also helps fight stress.

  • High in iron

Iron plays an important role in white and red blood cell production, the immune system, will give you energy and helps you metabolize protein

  • Sweet Potatoes contain Vitamin D.

Vitamin D is necessary for a good immune system and the building of healthy bones, heart, nerves, skin and teeth.

  • High in Vitamin C

Vitamin C helps your immune system fight of colds and flues, prevents aging, helps protect our body from toxins and aids digestion.

  • Contain the Vitamin B6

Vitamin B6 has been shown to help prevent heart attacks.

Makes one batch:

  • 3 Medium Sweet Potatoes
  • 3 Free Range Organic Eggs
  • 1 Large Mashed Ripe Banana or 2 Small Mashed Bananas
  • 100-200gr. Crushed Organic Walnuts (Could also use Chocolate Chips)
  • 1 Teaspoon Baking Soda
  • 4 Large Scoops of Vanilla Protein Powder (or 100gr. of flour of your choice mixed with vanilla and 1/6 tsp of salt)
  • 6-9 Tablespoons (or more) of Unsweetened Cacao Powder
  • Stevia or Sweetener of Choice to taste
  • A pinch of Cinnamon

Prepare the sweet potatoes as you usually would. (I baked mine in the oven at about 170 degrees Celsius for 15-20min.) Peel the sweet potatoes, then mash or blend in a food processor until they reach a smooth consistency, set aside and let cool down. In the meanwhile mix the eggs and the mashed banana. Then add the mashed sweet potatoes, protein power, unsweetened cacao powder, baking soda, stevia and cinnamon. Mix well and then add the crushed walnuts. Bake in the oven at 170 degrees Celsius for about 15-20 min or until done. Enjoy 🙂

If you follow me on instagram you probably will have noticed that I have a serious addiction to Pancakes. Healthy pancakes for that matter of fact.

Throughout the course of playing around and experimenting with healthy pancake recipes I have come up with several, wich will all be shared with you guys in the future or can be found on my instagram (@healthyyfood). But today I wanted to share these super simple, healthy and amazing banana-oat pancakes with you. They are absolutely delicious and super easy to make. Filled with complex carbs, protein, and healthy fats they are perfect for breakfast, post workout or simply as an afternoon snack.

You will need:

  • Half a banana
  • 20 gr. oat flour (you can make your own by grinding oats in a blender)
  • 2 organic, free range eggs
  • Add ins like ground vanilla or cinnamon for extra taste, or stevia for extra sweetness

Mash the banana and mix with the remaining ingredients. Cook in a non stick pan, with a little coconut oil on low heat. Top with toppings of your choice and enjoy 🙂
