Delicious and nutritious carrot cake waffles with a vegan “cream cheese” icing…yum! Depending on the flour you use these can be gluten free and when using protein powder they can even be made high protein and low carb.
You will need:
- 1 medium grated carrot
- 1 tbsp unsweetened apple sauce
- 1 free range, organic egg
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp ground vanilla
- 5 tbsp milk of choice, or water
- 20 gr. flour of choice (I like using a mix between protein powder and quinoa flour)
- stevia or sweetener of choice to taste (use less water if using a liquid sweetener)
Whisk the egg and add remaining ingridients. Pour the batter into a waffle maker and wait until done. Serve with toppings of your choice, I like to use this vegan “cream cheese” icing that I make by simply mixing one and a half tbsp all natural cashew butter and 1/2 tbsp water.
